GRILLED HULI HULI CHICKEN


This is the first time that we have done this type of meat, that is actually supposed to be Hawaiian food, rather it is or not I don't know since I have never been to Hawaii! What I can tell you about this type of Huli Huli Chicken is that it's good! It's grilled, which is more healthy, and isn't to sweet that it makes you cringe. It was new for the whole family, and the chicken tastes amazing both in a salad and cold directly from a fridge! The sauce itself is amazing, and can be used as a dipping sauce, which gives it that last bit of extra flavor that might have cooked out while it was grilling.


And then there are the amazing potato wedges! Something else that was done homemade, and I will provide when my mom writes down how much of what goes into it! Which means that I'll put it up when we make them next and I can get the measurements from her! They are VERY simple, you just have to decide how much of what spice you want to put on them. They complimented the Huli Huli chicken amazingly!

GRILLED HULI HULI CHICKEN


INGREDIENTS

  • 4 pounds boneless skinless chicken thighs, chicken breasts also work

  • 1 cup unsweetened pineapple juice

  • ½ cup soy sauce

  • ½ cup brown sugar

  • ⅓ cup ketchup

  • ¼ cup chicken broth

  • 2 teaspoons fresh ginger root, grated

  • 1½ teaspoons minced garlic

  • green onions, sliced for garnish

INSTRUCTIONS

  1. In a medium sized bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger and garlic. Reserve 1 cup sauce for basting. Add the chicken thighs and sauce to a ziplock bag and marinate at least 3 hours or overnight.

  2. Grill chicken, covered, over medium heat for 6-8 minutes on each side or until no longer pink. Baste occasionally with reserved marinade during the last 5 minutes. Garnish with green onions if desired
